You can try to extract it using a doom editor such as XWE or Slade (much better in my opinion). But they will come in .mus format, not .inf. You can convert it to midi using a program named mus2midi (although it doesn't work in my computer for some reason). If you try converting it, I saw a guy saying the .mus of the filename has to be written like ".MUS" for the program to work.
