Quick thoughts, from what I've played:
Spear Ress. 10 year - Haven't played but pretty clear it's a no-brainer and that is pretty much true for the original Spear Ress. as well.
Op: Letzterschutz - Playing this when it was Dos only, but loved it.
Absense - A bit repetitive in a few points, but highly solid sci-fi special story well realized. Enjoyed it a lot.
Totenkopf SDL - I wish the bugs could have gone but otherwise this was absolutely magnificent work.
G & G 0.5 - Haven't played enough though it looks cool.
Thomas' Wolfenstein 3D - Haven't actually played but if it succeeds at being on par with the original it's in the list!
Tome to Kill - Haven't played, but it's from Thomas, they almost always interest me (I couldn't get caught on to 10 New Ones as quickly however).
Spear Reloaded - Awesome, and very hard. Ridiculously anti-climatic ending is pretty forgivable. I wish Wolfenstein Reloaded would get an improvement treatment one of these days!
DHW TC - Played one episode, which I mostly enjoyed, though I'd argue that the actual map quality in the SoD and Wolf3D sets is superior to these maps, but they're pretty well mapped nonetheless and tons of new features add to things.
The spoiler only list:
Batman vs. Bane - Haven't played, but all the evidecne indicates it's outstanding. Not really fair to list your own mod as a favorite, but I guess it slides with ronwolf doing the levels.
Klooni - Successfully captured the Doom feeling to me. I can forget it's Wolfenstein. Supply balance is a bit patchy and there's one or two little bugs, but they can be overlooked and you should be supplied okay if you avoid starting levels from scratch.
medEvil and Op: Hund. - Majik Monkee mods, I'm not sure Hund. really interested me that much. medEvil was pretty good, but not Letzterschutz level. It was the Dos version I played though. Why no OMS mentions?
Big Time Gangsta - Haven't really heard much of it, and doesn't sound like something that would appeal to me.
Frayed - Not a fan of the level design.
Unsung - Not played, heard it has downsides but very unique and pretty strong overall to most opinions. And it had a 1.1 update since then.
Wolfendoom - Not played, but Areyep can always deliver solid fun, even his earlier works. That Wolfendoom II title should never have been used.
Project: X - Could not stand the level design, sorry.
@Thomas:
-I don't know of Schabbs 2000 having an SDL version.
-Sonder will never be publicly released so probably should not have been mentioned.
-Ipank and Wizzie sets: Mostly good, but not outstanding. I think "This Spear" (a Wizzie set) is the best of the bunch.
-Totengraeber: Absolute classic, 'nuff said.
Surprised these have had no mention:
-DHW SoD and Wolf3D sets. They got very good mapping (and/or little doubt in my mind they don't). And the Wolf3D does tend to stay consistent within episodes since all but one are single-authored.
-OMS sets, as mentioned above
-Wolfenstein Sextilogy, three very solid episodes and too bad it may never be finished to six.
-Conflict in the Fatherland. Converted to SDL compatible in 2011. Huge classic for an original game remake, hardly ever have I heard anything negative about it.
-NovoWolf (on doomjedi's part, since Thomas wouldn't favorite his own work).
-There are many sets that use only new GAMEMAPS and MAPHEAD files (where you need everything else from the original), and those would all be playable in SDL, but I'm not surprised only Thomas' Wolf3D was mentioned since these are implied to work in SDL, and they aren't sets that were made for SDL or SDL conversions.
-Did I mention I would LOVE to see Orb of Dilaaria SDL someday? This is far and away the remaining set I think is in the most desperate need of getting converted.
