Cooked my first steak today... I try to set the pan as hot as possible to try to get a good sear going. Towards end I put in butter, added some smashed garlic and thyme. I think I put too much butter though. I put in the butter too early and it'll burn, I put the pepper in early it'll burn due to the heat of the pan. It's a rib eye I got from Walmart, it's like $9 each. Heft stuff, it's like 1 to 3 quarters of an inch thick, the other ones were like... 3cm thick so I didn't have much of a choice. I saw my brother cook and it just looked bland as hell... he smothered it in BBQ sauce. So the entire steak tasted only of BBQ sauce (I'm not a fan of BBQ sauce that gets bought in supermarkets in the first place).
Mine wasn't perfect though. It was more medium well than medium. I don't have a thermal probe so I winged it by touch. The steak continued to cook after removed from heat source, so that got it a little more done than I estimated. I did let it rest as I quickly prepared the onions/mushrooms. Started with minute amount of olive oil, done when the onions gets into a good color, finished in the leftover juices/butter/thyme whatnot on my steak pan.
It's been an interesting experience.
Oh yeah. I prefer my steak medium.
